Ingredients
Fish and Spices
- 6 Fish Fillets big, firm fillets such as cod, or tilapia. about 6 oz each., snapper
- 1.5 tsp Salt or to taste
- 1 tsp Turmeric Powder
- 2 clove Garlic minced
Aromatics and Liquids
- 1 cup Curry Leaves fresh curry leaves
- 1/4 cup Oil coconut oil recommended for authentic flavor
- 1 cup Water plus more as needed for adjusting consistency
- 1 tbsp Oil for sautéing garlic (can use the same oil as before)
Instructions
Prepare the Curry Leaves Paste
- Make a paste of the curry leaves with 1 cup of water using a blender or food processor. Set aside.
Partially Fry the Fish
- Heat 1/4 cup oil in a pan over medium-high heat. Add 1/2 tsp turmeric powder and salt. Add the fish fillets and pan-fry until lightly browned on both sides. Remove from the pan and set aside.
Sauté Aromatics
- In the same pan, add 1 tbsp of oil (or more if needed). Add the minced garlic and sauté until lightly browned and fragrant.
Simmer the Curry
- Add the remaining 1/2 tsp turmeric powder and the prepared curry leaves paste to the pan. Stir well and bring to a simmer.
Combine and Cook
- Add the partially fried fish to the curry. Pour in more water if needed to achieve your desired consistency. Cover the pan and cook over medium heat for 12-15 minutes, or until the fish is cooked through and the sauce has thickened.
Adjust and Serve
- Taste and adjust the salt as needed. If the gravy is too thick, add a little more water. Once the desired consistency is reached, remove from heat and serve hot with rice.
