  • 1 cup Lentils moong dal, split, yellow
  • 2.5 cup Water for boiling the lentils
  • 2 tbsp Oil for tadka
  • Salt to taste

Prepare the Moong Dal

  • Rinse the moong dal under cold water until the water runs clear. In a pressure cooker, combine the moong dal, 2.5 cups of water, salt, and turmeric powder. Cook for 2-3 whistles or until the lentils are completely soft.

Mash the Dal

  • Once the pressure is released, carefully mash the cooked lentils using a spoon or potato masher. Leave some lentils intact for texture.

Make the Tadka

  • Heat oil in a small pan. Add cumin seeds and allow them to splutter. Add the red chili powder and sauté for a few seconds until fragrant (be careful not to burn the spices).

Combine and Serve

  • Gently pour the tadka over the mashed dal. Mix well. Just before serving, stir in the amchur (dry mango powder) and black pepper powder. Serve hot with puris, pakwan, or roti.

Expert Tips for the Perfect Masala Moong Dal

  • For a richer flavor, you can sauté some finely chopped onions and garlic in the oil before adding the cumin seeds for the tadka.
  • Adjust the amount of red chili powder according to your preferred spice level. Start with less and add more if needed.
