Vegetables

  • 200 gm Mushroom button mushrooms, cleaned and sliced
  • 2 Tomato medium-sized, pureed
  • 1 Onion finely chopped, large
  • 1 green bell pepper Bell Peppers finely chopped (optional, for added sweetness and color), green

  • 1.5 tsp Salt or to taste
  • 1 tbsp Oil vegetable or canola oil
  • Small handful Coriander for garnish, fresh

Instructions
 

Preparation

  • Clean and slice the mushrooms. Puree the tomatoes. Finely chop the onion and green bell pepper (if using).

Sautéing Aromatics

  • Heat oil in a pan or kadai. Add fennel seeds and sauté until fragrant. Add the chopped onion and sauté until translucent. Add the ginger-garlic paste and sauté until the raw smell disappears.

Building the Gravy

  • Stir in the tomato puree and cook until the oil separates from the gravy. Add red chili powder, coriander powder, turmeric powder, garam masala, and cumin powder. Sauté for a minute until fragrant.

Adding Mushrooms

  • Add the sliced mushrooms and mix well. The mushrooms will release water; cook until softened and the liquid evaporates. Season with salt to taste.

Finishing Touches

  • Stir in the chopped green bell pepper (if using) and cook for a few minutes. Add the kasuri methi and cook for 30 seconds more. Remove from heat.

Serving

  • Garnish with fresh coriander leaves. Serve hot with naan, roti, or steamed rice.
