Ingredients
Vegetables
- 200 gm Mushroom button mushrooms, cleaned and sliced
- 2 Tomato medium-sized, pureed
- 1 Onion finely chopped, large
- 1 green bell pepper Bell Peppers finely chopped (optional, for added sweetness and color), green
Spices & Aromatics
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Chili Powder adjust to taste, red
- 1 tsp Coriander Powder dhania
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Garam Masala
- 1/2 tsp Cumin Powder jeera
- 1/2 tsp Fennel Seed saunf
- 1/4 tsp Fenugreek Leaves dried, kasuri methi

Preparation
- Clean and slice the mushrooms. Puree the tomatoes. Finely chop the onion and green bell pepper (if using).
Sautéing Aromatics
- Heat oil in a pan or kadai. Add fennel seeds and sauté until fragrant. Add the chopped onion and sauté until translucent. Add the ginger-garlic paste and sauté until the raw smell disappears.
Building the Gravy
- Stir in the tomato puree and cook until the oil separates from the gravy. Add red chili powder, coriander powder, turmeric powder, garam masala, and cumin powder. Sauté for a minute until fragrant.
Adding Mushrooms
- Add the sliced mushrooms and mix well. The mushrooms will release water; cook until softened and the liquid evaporates. Season with salt to taste.
Finishing Touches
- Stir in the chopped green bell pepper (if using) and cook for a few minutes. Add the kasuri methi and cook for 30 seconds more. Remove from heat.
Serving
- Garnish with fresh coriander leaves. Serve hot with naan, roti, or steamed rice.
