Ingredients

- 1 cup Long-Grain Rice cooked and cooled
- 200 gm Button Mushrooms sliced
- 1 medium Carrot finely julienned
- 1 bunch Spring Onions chopped, white and green parts separated
- 2 tbsp Vegetable Oil
- 1/2 cup Peas cooked, green
Instructions
Prepare the Ingredients
- Soak long-grain rice for 10 minutes. Cook according to package directions until fluffy, then cool completely.
- Finely julienne the carrot. Chop the white and green parts of the spring onions separately. Mince the garlic and green chili. Slice the mushrooms.
Stir-fry the Vegetables
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Once hot, add the minced green chili and garlic. Stir-fry for about 30 seconds until fragrant.
- Add the carrots and stir-fry for 1-2 minutes until slightly softened. Add the mushrooms and white parts of the spring onions and continue to stir-fry for another 2-3 minutes until the mushrooms are tender.
Combine and Season
- Add the soy sauce, Sriracha (or chili garlic sauce), and black pepper. Stir well to combine.
- Add the cooked green peas and cooked rice. Toss everything together gently, ensuring the rice is evenly coated with the sauce and seasonings.
- Stir in salt to taste.
Garnish and Serve
- Remove from heat and garnish with the chopped green parts of the spring onions.
