Ingredients

- 1 Pineapple medium size, ripe
For the Lemonade:
- 1/4 cup Lemon Juice freshly squeezed
- 2-4 tbsp Sugar adjust to your sweetness preference, or to taste; optional
- 6-8 Mint Leaves fresh
- 500 ml Soda Water chilled
- Ice Cubes as needed
- 1/2 cup Water for blending

- Peel and chop the pineapple into small chunks. Add the pineapple chunks and 1/2 cup of water to a blender and blend until completely smooth.
Combine Ingredients
- In a separate container, combine the pineapple puree, lemon juice, sugar (if using), and mint leaves. Stir well to dissolve the sugar.
Blend and Chill
- Add a handful of ice cubes to the mixture and blend briefly until the ice is partially crushed. For a smoother texture, blend longer. If the mixture is too thick add a little more water, to adjust consistency.
Assemble the Drink
- Pour the pineapple-lemon mixture into a pitcher or individual glasses, filling them about halfway.
