For the Jaggery Syrup

  • 1 cup Jaggery organic, adjust amount based on mango sweetness
  • 1/2 cup Water

For the Mango Drink

  • 2 large Mangoes ripe, organic
  • 2 cup Water for diluting the concentrate

Prepare the Jaggery Syrup

  • Combine 1 cup of jaggery and 1/2 cup of water in a shallow pan over medium heat.
  • Stir continuously with a ladle for 3-5 minutes, until the jaggery dissolves completely and forms a syrupy consistency.
  • Remove from heat and let it cool to room temperature.

Prepare the Mango Puree

  • While the syrup cools, blend 2 ripe mangoes into a smooth puree using a blender.

Combine and Store

  • Once the jaggery syrup has cooled, gently stir in the mango puree. Mix well to ensure no lumps form.
  • Transfer the mixture into clean, dry jars. Store in the refrigerator for up to 5 days. If you wish to extend the shelf life, add a suitable preservative according to the instructions on the preservative product.

Make the Mango Drink

  • To serve, add 3 tablespoons of the mango jaggery concentrate to a glass filled with ice.
  • Add 2 cups of water or more, to taste.
