Ingredients
 

For the Mojito Syrup

  • 1 cup Sugar granulated
  • 1/2 cup Water
  • 1 cup Mint fresh leaves, packed
  • 2 Lemon juiced

For Each Mojito

  • 2-3 oz Club Soda or sparkling water
  • 3 tbsp Mojito Syrup (see recipe above)
  • Ice cubes Ice plenty!
  • 1 Lemon for garnish, wedge
  • Few Mint for garnish, fresh, sprigs

Instructions
 

Make the Mojito Syrup

  • Combine 1 cup sugar and 1/2 cup water in a small saucepan over medium heat. Stir until the sugar dissolves completely and the mixture comes to a simmer.

Infuse the Syrup

  • Remove from heat and let the syrup cool slightly. Add 1 cup packed fresh mint leaves and the juice of 2 lemons to the warm syrup. Stir well.

Blend and Strain

  • Let the mixture steep for at least 15 minutes. Then, using an immersion blender or a regular blender, carefully blend the mixture until smooth. Strain the syrup through a fine-mesh sieve or cheesecloth to remove the mint leaves and any pulp. Discard the solids.

Bottle and Store

  • Transfer the strained mojito syrup to an airtight container or bottle. Refrigerate for up to 2 weeks.

Make a Mojito

  • Fill a highball glass with ice. Add 3 tablespoons of the chilled mojito syrup.
  • Top with 2-3 ounces of club soda or sparkling water.
  • Garnish with a lemon wedge and a few fresh mint sprigs.
  • Stir gently and enjoy!
