Make the Cake Flour

  • Whisk 1 1/2 cups all-purpose flour with 3 tbsp cornstarch. Remove 3 tbsp of the mixture and set aside.

Make the Buttermilk

  • Combine 1 cup whole milk and 1 tbsp lemon juice. Let stand for 10 minutes.

Prepare the Cupcake Batter

  • Preheat oven to 175°C (350°F). Line a muffin tin with cupcake liners.
  • Sift together cake flour, baking powder, salt, and cocoa powder. Set aside.
  • Cream together softened butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate bowl, combine buttermilk and red food coloring.
  • Gradually add the dry ingredients and the buttermilk mixture to the wet ingredients, alternating between the two and beginning and ending with the dry ingredients. Mix until just combined.
  • In a small bowl, combine baking soda and vinegar; immediately pour into the batter and gently fold to combine.
  • Fill cupcake liners about 2/3 full.
  • Bake for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cupcakes cool completely in the tin before frosting.

Make the Cream Cheese Frosting

  • Beat softened cream cheese until smooth.
  • Beat in vanilla extract and powdered sugar until smooth and creamy.
  • Gradually beat in heavy cream until the frosting reaches your desired consistency.

Frost and Serve

  • Frost the cooled cupcakes with the cream cheese frosting. Chill for at least 30 minutes before serving.
