Ingredients
For the Cupcakes
- 1 1/4 cup Cake Flour to make cake flour, whisk 1 1/2 cups all-purpose flour with 3 tbsp cornstarch; remove 3 tbsp of mixture and set aside.
- 1/4 tsp Baking Powder
- 1/4 tsp Salt
- 1 tbsp Cocoa Powder
- 1/2 cup Butter softened, unsalted
- 3/4 cup Sugar granulated
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Buttermilk 1 cup whole milk + 1 tbsp lemon juice, let stand 10 minutes
- 1 tbsp Food Coloring liquid, red
- 1/2 tsp Vinegar white
- 1/2 tsp Baking Soda
For the Cream Cheese Frosting
- 180 gm Cream Cheese softened
- 1/2 tsp Vanilla Extract
- 1/2 cup Sugar icing sugar, powdered
- 2/3 cup Heavy Cream double cream
Instructions
Make the Cake Flour
- Whisk 1 1/2 cups all-purpose flour with 3 tbsp cornstarch. Remove 3 tbsp of the mixture and set aside.
Make the Buttermilk
- Combine 1 cup whole milk and 1 tbsp lemon juice. Let stand for 10 minutes.
Prepare the Cupcake Batter
- Preheat oven to 175°C (350°F). Line a muffin tin with cupcake liners.
- Sift together cake flour, baking powder, salt, and cocoa powder. Set aside.
- Cream together softened butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, combine buttermilk and red food coloring.
- Gradually add the dry ingredients and the buttermilk mixture to the wet ingredients, alternating between the two and beginning and ending with the dry ingredients. Mix until just combined.
- In a small bowl, combine baking soda and vinegar; immediately pour into the batter and gently fold to combine.
- Fill cupcake liners about 2/3 full.
- Bake for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool completely in the tin before frosting.
Make the Cream Cheese Frosting
- Beat softened cream cheese until smooth.
- Beat in vanilla extract and powdered sugar until smooth and creamy.
- Gradually beat in heavy cream until the frosting reaches your desired consistency.
Frost and Serve
- Frost the cooled cupcakes with the cream cheese frosting. Chill for at least 30 minutes before serving.
