Prepare the Dough

  • Combine flour, baking soda, yogurt, salt, and 2 tablespoons of oil in a bowl. Knead into a smooth dough. Let it rest for 30 minutes.

Prepare the Mutton Filling

  • Heat 1 tablespoon of oil in a pan. Add onion paste and ginger-garlic paste. Sauté until browned.
  • Add the minced mutton and stir-fry. Cover and cook for 10 minutes.
  • Stir in red chili powder, garam masala, and salt. Cook until the moisture evaporates and the filling is dry.

Assemble the Paratha

  • Roll out the dough into small circles. Beat the eggs lightly.
  • Brush the dough with egg. Place a spoonful of mutton filling in the center. Bring the four sides together to form a parcel. Brush the entire surface with egg.

Cook the Paratha

  • Heat a little oil in a flat pan or griddle. Cook the paratha on medium heat, turning occasionally, until golden brown and crispy on both sides.
