Ingredients & Quantity
  • For Lava Cake
  • 129 gms semi-sweet dark chocolate
  • 120 grams butter
  • 2 whole eggs
  • 70 grams sugar
  • 70 grams all purpose flour(maida - sieved)
  • Butter - for greasing ramekins
  • For Almond Crumble
  • 100 gram butter
  • 100 grams sugar
  • 100 grams flour
  • 120 grams almond powder
  • 100 grams chopped almonds
  • salt a pinch
  • For Strawberry Basil Coulis
  • 2 cups of strawberries (chopped)
  • 50 ml mixed fruit juice
  • 2 tbsp sugar
  • 4-5 basil leaves
How to cook?
  1. For Cake: Melt the chocolate in a double boiler or in a microwave.
  2. In a separate bowl, whisk eggs and sugar until light and fluffy.
  3. once the chocolate is melted, remove from the heat and add in the butter. Mix until the butter melts.
  4. Add Chocolate butter mixture into the eggs slowly and mix.
  5. Add flour and fold until well incorporated
  6. Butter bottom and sides of ramekins and pour in the mixture about 3/4 way full.
  7. Place the ramekins on the baking tray in the preheated oven 180 C for 15 minutes
  8. Demould and serve immediately with Icecream.
  9. For Almond Crumble: In a large bowl mix all the dry ingredients
  10. Add the butter and mix till you get a crumbly texture.
  11. Add the chopped almonds
  12. Place the mixture on the baking tray lined with butter paper and bake in preheated oven at 160 C until light golden brown
  13. For Strawberry Basil Coulis : In a pan put chopped Strawberries fruit juice and sugar and cook till you get a thick jam add basil leaves, blend and keep aside.

  15. Serve the Molten lava cake with vanilla icecream, cocoa powder strawberry basil coulis and almond crumble.
