Instructions

Prepare the Idlis

  • Steam fresh idlis or gently reheat leftover idlis to ensure they are warm and soft.

Prepare the Yogurt

  • Line a fine-mesh sieve with cheesecloth and place the yogurt in it. Let it drain for 10-15 minutes to remove excess whey. This creates a creamier texture.

Sweeten the Yogurt

  • In a bowl, gently whisk the drained yogurt with powdered sugar until smooth and creamy.

Assemble the Mini Idli Bhalla

  • Arrange the idlis on a serving plate. Top each idli generously with the sweetened yogurt.

Add the Chutneys

  • Spread a layer of sweet tamarind chutney over the yogurt, followed by a layer of spicy coriander chutney.

Sprinkle the Spices

  • Sprinkle red chili powder, chaat masala, and roasted cumin powder evenly over the chutneys. Add a pinch of salt if desired.

Garnish and Serve

  • Garnish with tutti frutti and nylon sev. Serve immediately and enjoy your refreshing and healthy Mini Idli Bhalla!
