Ingredients
For the Idli Batter
For the Sambhar Dip
- 1/2 cup Pigeon Peas split pigeon peas
- 2 Tomatoes medium-sized
- 1 Chili chopped, green
- 1/2 inch Ginger
- 7-8 Curry Leaves
- 1/2 cup Water for boiling the dal
- 1 Tamarind soaked in water for 10 minutes, walnut-sized
- 1/2 tsp Turmeric
- 1 tsp Coriander
- 1 tsp Chili Powder red
- 1/4 tsp Asafoetida hing
- 1 Onion finely sliced, small
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 2 tsp Sambar Powder
- 10-12 sprigs Coriander chopped
For Sautéing Idlis
- 2 tsp Oil
- 1 tbsp Idli Podi idli powder
- 10 Toothpicks
Instructions
Prepare the Idli Batter
- Combine idli rice and urad dal. Grind into a smooth batter and ferment for 10-12 hours.
Steam the Idlis
- Steam the idli batter in mini idli moulds for 10 minutes.
Prepare the Sambhar Dip
- Boil toor dal with tomatoes, green chili, ginger, curry leaves, and water. Cool and blend to a thick consistency.
- Add tamarind water to adjust tartness. Bring to a boil.
- Heat oil in a skillet, add mustard seeds, curry leaves, and asafoetida. Sauté until mustard seeds splutter.
- Add sliced onions and sauté until translucent.
- Add sambar powder, turmeric powder, coriander powder, red chili powder, and salt. Sauté the spices well.
- Mix the sautéed spices into the sambhar dip. Simmer for two minutes.
Sauté Idlis
- Heat oil in a skillet and sauté half of the steamed idlis with idli podi for a few seconds.
Assemble and Serve
- Mount the remaining idlis on toothpicks and serve immediately with the sambhar dip.
