  • 1 Tomato medium, thinly sliced
  • 1 Onion medium, thinly sliced
  • 1/4 cup Coriander chopped
  • 1 Chili green, thinly sliced
  • 4 tbsp Oil vegetable

Instructions
 

  • Prepare the tomato and onion slices. Slice the tomato and onion thinly.
  • Prepare the green chili. Remove the seeds from the green chili and slice it thinly.
  • Sauté the tomato slices. Heat 1/2 tablespoon of oil in a small skillet over medium heat. Add the tomato slices and sauté lightly until softened but still holding their shape. Set aside.
  • Dry roast the chili slices. In the same skillet, dry roast the green chili slices for about a minute until fragrant. Set aside.
  • Prepare the adai batter. In a bowl, combine the adai batter, sugar, salt, and cumin seeds. Mix well. Do not add water.
  • Cook the mini adai dosas. Heat a flat griddle or tawa over medium heat. Add 1 teaspoon of oil to the center of the tawa. Pour 1/2 ladle of batter onto the hot tawa and spread it gently to form a small, thin circle, about the size of your palm.
  • Cover and cook. Cover the tawa with a lid and cook for 1-2 minutes, or until the top of the dosa appears slightly puffed and the edges start to brown. Covering the tawa traps steam and helps the dosa cook evenly.
  • Flip and cook. Flip the dosa and cook for another minute on the other side until golden brown and crispy.
  • Assemble the mini adai dosas. Place a sautéed tomato slice in the center of each dosa. Arrange two onion rings around the tomato. Sprinkle with chopped cilantro and garnish with the roasted green chili slices. Add a pinch of salt on top.
  • Serve. These mini adai dosas can be enjoyed immediately. For lunchboxes, stack two dosas together like a burger and secure them with a toothpick.
