Ingredients
Instructions
- In a bowl, mash the ripe bananas using a fork or potato masher until smooth. Set aside. Lightly grease a plate or dish with ghee and set aside.
- Heat 2 teaspoons of ghee in a heavy-bottomed or non-stick pan over medium heat. Add the mashed bananas and sauté for 3-5 minutes, stirring constantly, until fragrant.
- Add the jaggery to the pan. Stir continuously as the jaggery melts and combines with the banana pulp. Add a teaspoon of ghee to prevent sticking.
- Continue to cook and stir over medium heat for about 15 minutes. The halwa is ready when it thickens and forms a mass that pulls away from the sides and bottom of the pan. This patient stirring develops the rich flavors of the halwa.
- Transfer the halwa to the greased plate. Using a spatula greased with ghee, spread the halwa evenly. Sprinkle the chopped nuts over the top for garnish.
Recipe Notes
Good To Know
- For extra crunch, toast nuts (like cashews or almonds) before adding them to the halwa, and reserve some for topping.
- For richer flavor and color, sauté the mashed bananas in ghee until they caramelize before adding jaggery.
- To intensify the aroma, add a pinch of cardamom powder or a few saffron strands while cooking.
- Banana halwa firms up as it cools. For a sliceable version, cook longer, set in a greased tray, and cut into squares after it sets.
Expert Tips
- Adjust the amount of jaggery based on the sweetness of your bananas. Taste and add more as needed.
- Don't overcook the halwa. It should be thick and come together, but not dry or burnt.
- Experiment with different nuts and spices! Walnuts, pistachios, and a touch of nutmeg are delicious additions.
Storage Instructions
- Store leftover halwa in an airtight container in the refrigerator for up to 3-4 days. Gently reheat in the microwave or on the stovetop before serving.
