Ingredients
For the Tomato Halwa
- 300 gm Tomatoes less tangy, ripe
- 75 gm Mawa khoya
- 60 gm Sugar
- 80 gm Ghee
- ½ tsp Cardamom Powder
For the Garnish (Optional)
- ¼ cup Fruits chopped, dry, of your choice
- 2 tbsp Beetroot Paste for color, optional
Instructions
- Blanch the tomatoes in boiling water for 15 minutes. This helps loosen the skins.
- Once cool, peel and mash the tomatoes. Strain them to remove the seeds, although a few remaining seeds won't affect the final dish.
- In a deep, non-stick wok or pan, heat the ghee or butter over medium-high heat.
- Add the mashed tomatoes, cardamom powder, sugar, and mawa to the pan.
- Stir continuously, cooking for 20-25 minutes. The halwa is ready when the ghee begins to separate from the mixture and a fragrant aroma fills your kitchen.
- For a richer color, you can optionally stir in beetroot paste at this stage.
- Garnish with chopped dry fruits of your choice. Serve warm or chilled.
