Ingredients
Marination Ingredients
- 500 gm Chicken Thighs Or Breasts boneless
- 6 tbsp Buttermilk
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black, freshly ground, or to taste
- 2 tsp Ginger-Garlic Paste
- 1 Large Egg lightly beaten
- 3 tbsp Corn Flour
Tempering & Sauce Ingredients
- 6 Chilies green, slit lengthwise
- 10 Curry Leaves
- 7 Mint Leaves fresh
- 1 tbsp Garlic minced
- 1 tsp Chili Powder red
- 1 tsp Cumin Seeds jeera
- 1 tsp Coriander Powder
- 2 tbsp Yogurt
- 1.5 tsp Salt or to taste
- 1 tsp Soy Sauce
- 1/2 tsp Msg ajinomoto, optional
- 200 ml Refined Oil for frying, or vegetable oil
Instructions
Marinate the Chicken
- Marinate the chicken in buttermilk, salt, and pepper for at least 30 minutes, or up to 2 hours in the refrigerator for maximum tenderness.
Prepare the Spice Mixture
- In a separate bowl, whisk together the beaten egg, ginger-garlic paste, and cornflour.
- Add this mixture to the marinated chicken and mix well to coat evenly. Let it sit for another 30 minutes to allow the flavors to meld.
Fry the Chicken
- Heat about 100ml of the oil in a large pan or wok over medium-high heat. Once hot, carefully add the chicken pieces, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken and set aside on a wire rack or paper towel to drain excess oil.
Make the Sauce
- In the same pan, add the remaining oil. Add the minced garlic and sauté until fragrant. Then, add the curry leaves, green chilies, and mint leaves. Sauté for a few seconds.
- Add the cumin seeds, coriander powder, and red chili powder. Stir-fry for about 30 seconds until fragrant.
- Stir in the yogurt and salt. Cook for about 1-2 minutes, allowing the yogurt to slightly thicken.
- Finally, stir in the soy sauce and MSG (if using). Simmer for another minute.
Combine & Serve
- Add the fried chicken pieces to the sauce, gently tossing to coat them evenly. Cook for another minute to heat through. Serve hot as an appetizer or snack.
