Ingredients
Dry Ingredients
- 1 cup Rolled Oats instant oats, finely ground for best results
- 1 cup Semolina suji, finely ground
- 1.5 tsp Salt adjust to taste
- 1 tsp Baking Soda substitute for eno fruit salt if desired
Wet Ingredients
Spice & Tadka
- 1/2 tsp Chili Powder adjust to taste, red
- 1/2 tsp Mustard Seeds rai, for tempering
- 6-8 leaves Curry Leaves
- 2 tbsp Oil for tempering
Instructions
Prepare the Batter
- Combine rolled oats, semolina, yogurt, salt, and red chili powder in a large bowl. Mix well.
- Gradually add water, mixing until you achieve a smooth batter consistency similar to idli batter. Let the batter rest for 10-15 minutes.
Steam the Cupcakes
- Add baking soda (or Eno Fruit Salt) to the batter and gently mix. Do not overmix.
- Fill greased cupcake molds about 2/3 full.
- Place the molds in a steamer and steam over medium-high heat for 10-12 minutes, or until the cupcakes are cooked through and spring back when lightly touched.
Make the Tadka & Serve
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and sauté briefly.
- Remove the cupcakes from the steamer and let them cool slightly in the molds before removing.
- Pour the tadka over the cupcakes and serve warm or at room temperature.
