Ingredients
 

Dry Ingredients

  • 1 cup Rolled Oats instant oats, finely ground for best results
  • 1 cup Semolina suji, finely ground
  • 1.5 tsp Salt adjust to taste
  • 1 tsp Baking Soda substitute for eno fruit salt if desired

Wet Ingredients

  • 1 cup Yogurt plain yogurt or curd
  • 1/2 - 3/4 cup Water add as needed to achieve desired batter consistency

Instructions
 

Prepare the Batter

  • Combine rolled oats, semolina, yogurt, salt, and red chili powder in a large bowl. Mix well.
  • Gradually add water, mixing until you achieve a smooth batter consistency similar to idli batter. Let the batter rest for 10-15 minutes.

Steam the Cupcakes

  • Add baking soda (or Eno Fruit Salt) to the batter and gently mix. Do not overmix.
  • Fill greased cupcake molds about 2/3 full.
  • Place the molds in a steamer and steam over medium-high heat for 10-12 minutes, or until the cupcakes are cooked through and spring back when lightly touched.

Make the Tadka & Serve

  • Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and sauté briefly.
  • Remove the cupcakes from the steamer and let them cool slightly in the molds before removing.
  • Pour the tadka over the cupcakes and serve warm or at room temperature.
