Coating
- 1/2 cup All-Purpose Flour also known as maida, plain flour
- 1 cup Breadcrumb
Instructions
Prepare the Potatoes and Vegetables
- Boil the potatoes until tender. Drain, cool, and mash.
- Steam the chopped mixed vegetables until tender-crisp. Squeeze out excess water.
Combine Ingredients
- In a large bowl, combine the mashed potatoes, steamed vegetables, coriander, green chilies, ginger, salt, and amchur powder. Mix well.
Prepare the Batter
- In a separate bowl, whisk together the all-purpose flour and water to create a smooth batter.
Shape and Coat the Cutlets
- Lightly oil your hands. Divide the vegetable mixture into 10 equal portions.
- Shape each portion into a flat, round patty, about 1/2 inch thick.
- Dip each patty in the flour batter, ensuring it's fully coated.
- Roll the battered patties in breadcrumbs, pressing gently to adhere.
Fry the Cutlets
- Heat the oil in a frying pan over medium-high heat. The oil should be about 1 1/2 inches deep.
- Test the oil temperature by dropping a small amount of batter into the pan; it should rise to the surface immediately.
- Fry a few cutlets at a time, ensuring they are not overcrowded in the pan.
- Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove the cutlets and place them on a paper towel-lined plate to drain excess oil.
- Repeat until all the cutlets are fried.
- Serve hot and enjoy!

Expert Tips for Perfect Vegetable Cutlets
- For extra flavor, add a pinch of garam masala or turmeric to the vegetable mixture.
- If you prefer less oily cutlets, you can shallow fry them instead of deep frying.
- Don't overcrowd the pan while frying, as this will lower the oil temperature and result in soggy cutlets.
- Serve these delicious cutlets with your favorite chutney or dipping sauce for an even more flavorful experience.
