Instructions

Prepare the Potatoes and Vegetables

  • Boil the potatoes until tender. Drain, cool, and mash.
  • Steam the chopped mixed vegetables until tender-crisp. Squeeze out excess water.

Combine Ingredients

  • In a large bowl, combine the mashed potatoes, steamed vegetables, coriander, green chilies, ginger, salt, and amchur powder. Mix well.

Prepare the Batter

  • In a separate bowl, whisk together the all-purpose flour and water to create a smooth batter.

Shape and Coat the Cutlets

  • Lightly oil your hands. Divide the vegetable mixture into 10 equal portions.
  • Shape each portion into a flat, round patty, about 1/2 inch thick.
  • Dip each patty in the flour batter, ensuring it's fully coated.
  • Roll the battered patties in breadcrumbs, pressing gently to adhere.

Fry the Cutlets

  • Heat the oil in a frying pan over medium-high heat. The oil should be about 1 1/2 inches deep.
  • Test the oil temperature by dropping a small amount of batter into the pan; it should rise to the surface immediately.
  • Fry a few cutlets at a time, ensuring they are not overcrowded in the pan.
  • Fry until golden brown on both sides, about 2-3 minutes per side.
  • Remove the cutlets and place them on a paper towel-lined plate to drain excess oil.
  • Repeat until all the cutlets are fried.
  • Serve hot and enjoy!

Recipe Notes

Expert Tips for Perfect Vegetable Cutlets

  • For extra flavor, add a pinch of garam masala or turmeric to the vegetable mixture.
  • If you prefer less oily cutlets, you can shallow fry them instead of deep frying.
  • Don't overcrowd the pan while frying, as this will lower the oil temperature and result in soggy cutlets.
  • Serve these delicious cutlets with your favorite chutney or dipping sauce for an even more flavorful experience.
