Ingredients
For the Jamun Custard Base
- 1 cup Milk low-fat
- 2 tbsp Corn Flour
- 1 1/2 cup Milk low-fat
- 4 tbsp Jamun Pulp black pulp; approximately 1 cup, fresh
- 2-3 tbsp Sugar Substitute such as stevia or erythritol; adjust to taste
Optional additions
- 1/2 tsp Vanilla Extract for enhanced flavor
- Pinch Salt to balance sweetness
Instructions
Prepare the Custard Base
- Combine 1 cup of low-fat milk and cornstarch in a small bowl. Whisk until smooth and no lumps remain. Set aside.
Cook the Milk Mixture
- In a medium saucepan, heat the remaining 1 1/2 cups of low-fat milk over medium heat. Bring to a simmer, stirring occasionally.
Thicken the Custard
- Slowly whisk the cornstarch mixture into the simmering milk. Continue whisking constantly until the mixture thickens and coats the back of a spoon. This will take about 2-3 minutes.
Incorporate Jamun and Sweetener
- Remove from heat and stir in the jamun pulp and sugar substitute. Add vanilla extract and salt, if using. Stir well to combine.
Cool and Freeze
- Transfer the mixture to an airtight container. Allow to cool completely in the refrigerator for at least 2 hours. Once cooled, freeze for 3-4 hours.
Blend and Freeze Again
- Remove the partially frozen mixture and blend using an immersion blender or in a regular blender until smooth and creamy. Return the mixture to the container and freeze for another 6-8 hours, or until completely solid.
Serve
- Remove from freezer 10-15 minutes before serving. Scoop and enjoy!
