Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour atta, whole
- 1/4 tsp Cardamom Powder elaichi, finely ground
- 1 cup Sugar granulated
Instructions
Preparing the Halwa
- In a heavy-bottomed pan or kadai, heat the desi ghee over medium-low heat. Add a pinch of salt. Once the ghee is hot, add the cardamom powder and stir gently for a few seconds to release its aroma. Add the whole wheat flour and stir continuously with a sturdy spoon or spatula to prevent burning.
Roasting the Flour
- Reduce heat to low. Continue stirring the flour in the ghee, ensuring it doesn't stick to the bottom or sides of the pan. This roasting process is crucial for developing the rich flavor and color of the halwa. It takes approximately 20-25 minutes until the flour turns a deep golden-brown color and a nutty aroma fills your kitchen.
Adding Liquid and Sugar
- Gradually pour in the hot water, stirring continuously to prevent lumps from forming. Continue cooking until the water is fully absorbed and the mixture starts to pull away from the sides of the pan. Stir in the sugar and toasted slivered almonds (if using).
Completing the Halwa
- Remove the pan from the heat. Cover the pan immediately with a tight-fitting lid. Allow the halwa to rest for at least 10-15 minutes. The residual heat will soften the flour and cause the sugar to fully dissolve and melt into the halwa, creating a smooth and creamy texture.
Recipe Notes
Expert Tips for the Perfect Atta Halwa
- Use high-quality ghee: The flavor of the ghee significantly impacts the final taste of the halwa. Opt for a good quality desi ghee for a richer, more authentic flavor.
- Low and slow cooking: Patience is key! Roasting the flour slowly over low heat is essential for achieving the perfect color and flavor without burning it.
- Don't skip the resting period: Allowing the halwa to rest after removing it from the heat is crucial for the sugar to dissolve completely and the halwa to develop its characteristic soft texture.
- Adjust sweetness to taste: If you prefer a less sweet halwa, reduce the amount of sugar to your liking.
