- 3/4 tsp Salt or to taste
- 3/4 tsp Caster Sugar

- In a large bowl, sift together the whole wheat flour and baking soda. This ensures a light and airy texture.
- Add the caster sugar, salt, and 1 1/2 tablespoons of ghee to the dry ingredients.
- Gently mix the ingredients using your fingers until combined.
- Pour ¾ cup of hot water into the mixture. Mix with a spatula to form a shaggy dough. Add the remaining 1-2 tablespoons of water if needed, depending on the flour's absorbency.
- Knead the dough on a lightly floured surface until it becomes soft, smooth, and elastic. This develops the gluten, which gives the parotta its structure.
- Cover the bowl with a damp cloth and let the dough rest for 45-60 minutes. This allows the gluten to relax, making the dough easier to roll.
- Divide the dough into 6 equal-sized balls.
- Lightly dust your work surface with flour. Place one dough ball on the floured surface.
- Roll out the dough ball into a thin circle, as thin as possible.
- Smear a thin layer of ghee evenly over the rolled-out circle.
- Pleat the circle from the top, creating a long strip.
- Starting from one end, roll the pleated dough into a spiral. Gently tuck the last edge into the center of the spiral.
- Press the spiral gently and place it in a bowl.
- Repeat steps 7-12 for the remaining dough balls.
- Cover the bowl and let the spiraled dough rest for another 15-30 minutes. This allows the layers to relax further.
- Roll out each spiraled dough ball into a 4-5 inch circle.
- Heat a flat pan or tawa over medium heat. Cook each parotta one at a time, drizzling a little ghee or oil on both sides, until golden brown and cooked through.
