Ingredients
For the Egg Mixture:
- 4 Eggs
- 1 can (14 oz) Sweetened Milk condensed
- 1/2 cup Milk fresh whole milk
- 1/2 tsp Cardamom elaichi powder
For the Garnish:
- 1/4 cup Cashews finely chopped
- 1/4 cup Pistachios finely chopped
- 1/4 cup Raisins
- Pinch Saffron optional, steeped in 1 tablespoon of warm milk
- 2 tbsp Clarified Butter clarified butter (desi ghee)
- 2 tbsp Water for saffron milk (optional)
Instructions
Prepare the Egg Mixture
- Whisk the eggs gently in a bowl until slightly frothy.
- Add the condensed milk, fresh milk, cardamom powder, chopped cashews, pistachios, and raisins. Whisk until well combined and smooth.
Cook the Mixture
- In a non-stick pan, heat the ghee over low heat. Pour in the egg mixture.
- Cook, stirring continuously with a whisk, until the mixture thickens and starts to pull away from the sides of the pan. This will take about 10-15 minutes.
- If using saffron, gently stir in the saffron milk during the last few minutes of cooking.
- Remove from heat and transfer the mixture to a bowl to cool completely.
Shape and Garnish
- Once the mixture is cool, roll it into small, round balls.
- Garnish with the remaining chopped pistachios, a pinch of saffron strands (if using), and a small piece of silver leaf (optional).
- Refrigerate for at least 30 minutes before serving.
