  • 1/2 cup Cucumber finely chopped
  • 1/2 cup Tomato finely chopped
  • 1 Onion finely chopped, red
  • 1/2 cup Mozzarella Cheese fresh, small cubes
  • 3 tbsp Parsley finely chopped; cilantro can be substituted, flat leaf
  • 1/4 cup Almonds sliced or chopped, toasted for enhanced flavor

Cook the Couscous

  • Bring 1 1/2 cups of water to a boil in a saucepan. Add salt and olive oil. Add the couscous, reduce heat to medium, and cook until slightly chewy (al dente minus a few degrees). Drain any excess water, cover, and let stand for 10 minutes.
  • Uncover and fluff with a fork.

Make the Vinaigrette
