Ingredients
For the Couscous
- 1 cup Israeli Couscous also known as pearl couscous
- 1 1/2 cup Water
- 1/2 tsp Olive Oil
- 1/2 tsp Salt added while cooking couscous, to taste
For the Salad
- 1 cup Chickpeas canned, or cooked from dry, rinsed and drained
- 1/2 cup Cucumber finely chopped
- 1/2 cup Tomato finely chopped
- 1 Onion finely chopped, red
- 1/2 cup Mozzarella Cheese fresh, small cubes
- 3 tbsp Parsley finely chopped; cilantro can be substituted, flat leaf
- 1/4 cup Almonds sliced or chopped, toasted for enhanced flavor
For the Vinaigrette
- 1 tbsp Olive Oil
- 1 tbsp Lemon Juice freshly squeezed
- 1 tbsp Apple Cider Vinegar or more lemon juice
- 1/4 tsp Cumin ground, roasted for a deeper flavor
- 1/4 tsp Paprika smoked
- 1-2 tsp Salt to taste
Instructions
Cook the Couscous
- Bring 1 1/2 cups of water to a boil in a saucepan. Add salt and olive oil. Add the couscous, reduce heat to medium, and cook until slightly chewy (al dente minus a few degrees). Drain any excess water, cover, and let stand for 10 minutes.
- Uncover and fluff with a fork.
Make the Vinaigrette
- In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, cumin, smoked paprika, and salt.
