Ingredients
Dry Ingredients
- 1 ¾ cups cup Wheat Flour (reduce 2 tbsp from 2 cups if desired), whole
- 2 tbsp Corn Flour
- 1 tbsp Milk Powder
- 1 ¼ tsp Baking Powder
- ¾ tsp Baking Soda
- ½ cup + 1 tbsp cup Cocoa Powder unsweetened
- 1 tsp Cinnamon ground
- 1 pinch Salt
Wet Ingredients
- 1 cup Sugar (+ 2 tbsp more, granulated, optional for extra sweetness)
- 1 cup Yogurt or curd
- ½ cup Vegetable Oil
- 1 tbsp Butter unsalted
- 1 tsp Vanilla Extract
- ¼ cup Coca-Cola

- 75 gm Walnuts chopped
Instructions
Preheat & Prepare
- Preheat your oven to 170°C (340°F). Grease and flour a 7 x 11 inch rectangular baking pan.
Combine Dry Ingredients
- Sift together the whole wheat flour, cornstarch, milk powder, baking powder, baking soda, cocoa powder, cinnamon, and salt 4-5 times to ensure a smooth batter.
Combine Wet Ingredients
- In a large bowl, cream together the sugar and yogurt until well combined. Add the oil, melted butter, and vanilla extract; mix until smooth.
Combine Wet and Dry
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Stir in the chopped walnuts.
Bake
- Pour the batter into the prepared pan and sprinkle with extra walnuts (optional). Bake for 25-29 minutes, or until a wooden skewer inserted into the center comes out clean.
