Ingredients
 

Chickpeas & Spinach

  • 1 cup Chickpea dried, kabuli chana or chole, or overnight, soak for at least 4-5 hours
  • 10 oz Spinach about 2 large bunches; yields almost a cup of puree after boiling, fresh, palak

Aromatics & Spices

  • 2 Onion finely chopped and made into a paste, medium
  • 2 tsp Garlic paste
  • 1 tsp Chili Paste adjust to your spice preference, green, hari mirch
  • 1 tsp Coriander dhania, ground
  • 1 tsp Cumin ground, jeera
  • 1 small stick Cinnamon stick

Other Ingredients

  • 3 tbsp Vegetable Oil refined oil, vegetable oil can be substituted
  • 1.5 tsp Salt or to taste
  • 1 Lime for juice
  • 1/2 cup Water as needed for desired consistency, or more

Instructions
 

Prepare the Chickpeas

  • Soak 1 cup of dried chickpeas for at least 4-5 hours, or preferably overnight. Drain the water and pressure cook the chickpeas for 3-4 whistles until soft but still holding their shape.

Prepare the Spinach

  • Wash and clean 10 oz of fresh spinach leaves. Blanch the spinach for a few minutes, then drain the water and blend into a smooth puree.

Sauté Aromatics

  • Heat 3 tablespoons of oil in a pan and add 1 small cinnamon stick. Add 2 tablespoons of onion paste and 2 teaspoons of garlic paste. Cook until the onions soften and lose their raw smell.

Add Spinach and Spices

  • Stir in the spinach puree and 1 teaspoon of green chili paste. Cook over low-medium heat, stirring frequently, until the spinach is well cooked.

Combine and Simmer

  • Add 1 teaspoon each of ground coriander and cumin, and 1.5 teaspoons of salt (or to taste). Mix well, then stir in the cooked chickpeas.

Finish the Curry

  • Add 1/2 cup of water (or more, as needed) and bring to a simmer. Cook for 3-4 minutes.

Serve

  • Stir in the juice of 1 lime. Remove from heat and serve your delicious Chole Palak hot with roti, naan, paratha, or rice.

Recipe Notes

Expert Tips for the Best Chole Palak

  • For a richer flavor, roast the spices (cumin, coriander, and cinnamon) lightly in a dry pan before grinding.
  • If you don't have a pressure cooker, you can boil the chickpeas until tender, which may take around an hour or more.
  • Adjust the amount of green chili paste according to your preferred spice level. Start with less and add more to taste.
  • Garnish with fresh cilantro (coriander leaves) and a squeeze of extra lime juice before serving for added freshness and visual appeal.
