Ingredients
For the Chickpeas
- 2 cup Kabuli Chana also known as safed chana; soak overnight, chickpeas
- 1 tsp Turmeric Powder haldi
- 1 tsp Salt for boiling chickpeas
For the Curry
- 3 tbsp Mustard Oil or vegetable oil
- 1/2 tsp Fenugreek Seeds methi dana
- 1/2 cup Onion finely chopped
- 2 leaves Bay Leaf small
- 1 cup Tomato finely chopped
- 2-3 Chili adjust to taste, chopped, green
- 2 tsp Ginger chopped
- 2 tsp Coriander Powder dhania
- 3 tbsp Achari Masala or to taste
- 1/4 cup Yogurt curd, whisked
- 1.5 tsp Salt or to taste
- 1/2 cup Water as needed, or more
For the Paneer
- 250 gm Cottage Cheese indian cottage cheese, cubed
- 1 tsp Dried Fenugreek Leaf dried fenugreek leaves
- 1 tbsp Lemon Juice
For Garnishing
- 2 tbsp Coriander chopped, or onion rings
Instructions
Prepare the Chickpeas
- Soak 2 cups of Kabuli chana (chickpeas) overnight. In the morning, boil them with 1 teaspoon of salt and 1 teaspoon of turmeric powder until tender but not mushy.
Sauté Aromatics
- Heat 3 tablespoons of mustard oil in a pan. Add 1/2 teaspoon of fenugreek seeds and sauté for a few seconds until fragrant, being careful not to burn them.
- Add 2 bay leaves and 1/2 cup of finely chopped onion. Sauté until the onion turns translucent and slightly pink.
Cook the Tomato Base
- Add 1 cup of finely chopped tomatoes, 2-3 chopped green chilies, and 2 teaspoons of chopped ginger to the pan. Cook until the tomatoes soften and release their oils.
Combine and Simmer
- Add 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder, and the boiled chickpeas to the pan. Mix well.
- Stir in 3 tablespoons of achaari masala, 1/4 cup of whisked yogurt, and 1.5 teaspoons of salt. Mix thoroughly.
- Add 1/2 cup of water (or more, as needed for desired consistency), cover the pan, and simmer for 4-5 minutes on low heat.
Add Paneer and Finish
- Add the cubed paneer, 1 tablespoon of lemon juice, and 1 teaspoon of kasuri methi. Mix gently and cook for another 4-5 minutes on medium heat.
Garnish and Serve
- Garnish with chopped coriander leaves or onion rings. Serve hot with roti, naan, paratha, or rice.
