Recipe Notes
Additional Tips
- For a deeper flavor, roast the tomatoes in the oven with a drizzle of olive oil and a pinch of salt before blending them into the soup; this will intensify their sweetness and add a subtle smokiness.
- If you prefer a smoother texture, strain the soup through a fine mesh sieve after blending to remove tomato skins and date fibers for a velvety finish.
- Try garnishing each bowl with a dollop of yogurt or a swirl of coconut cream and a sprinkle of finely chopped fresh coriander or mint for an aromatic, cooling contrast to the soup’s tangy-sweet profile.
- For a vegan version, substitute the butter with coconut oil or vegan margarine, which also adds a gentle richness that complements the dates and tomatoes.
