Ingredients
For the Dahi Bhalla (Lentil Fritters):
- 2 cup Gram Lentils also known as vada, black, split, urad dal
- 1 Chili finely chopped, green
- 1/2 inch Ginger finely chopped
- 1/2 tbsp Raisins
- 7.5 Almonds sliced or chopped
- 1.5 tbsp Coriander chopped
- 1.5 tsp Salt or to taste
- Water as needed Water for grinding batter
- Oil as needed Vegetable Oil for deep frying
For the Yogurt Topping:
- 2 cup Yogurt beaten until smooth, curd
For the Garnishing:
- 1/2 tsp Chaat Masala optional
- 1/4 tsp Chili Powder or to taste, red
- 1 tsp Cumin jeera, roasted
- 1.5 tsp Salt or to taste
- 1/2 cup Tamarind Chutney store-bought or homemade
- 1/4 cup Chutney green, store-bought or homemade
Instructions
Preparing the Batter
- Soak the urad dal overnight in plenty of water. Drain and grind the lentils in a blender with the green chilies and ginger, adding water gradually to achieve a smooth batter.
Making the Fritters
- Transfer the batter to a bowl and whisk vigorously for a few minutes to incorporate air. This results in lighter and fluffier fritters. Stir in the almonds, raisins, coriander, and a pinch of salt. Set aside.
Frying the Fritters
- Heat the oil in a kadai (deep frying pan) over medium heat. Carefully drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown on all sides, turning gently as needed.
Soaking the Fritters
- Once fried, gently place the fritters in a pan of simmering water for 6-7 minutes, or until soft. Remove and gently press each fritter between your palms to remove excess water.
