Ingredients
Dough Ingredients
- 0.75 cup Whole Wheat Flour whole
- 2 tsp Ghee
- Salt to taste
Filling Ingredients
- 0.5 tbsp Onion finely chopped
- 2 tbsp Coriander finely chopped
- 2 tbsp Carrot grated
- 0.33 tsp Cumin Seeds
- 0.33 tsp Carom Seeds
For Frying
- Oil for deep frying
Instructions
- In a large bowl, combine the whole wheat flour, ghee, and salt.
- Add the chopped onion, cilantro, grated carrot, cumin seeds, and carom seeds to the flour mixture.
- Gradually add water, a little at a time, mixing until a stiff dough forms. Knead for 2-3 minutes until smooth. This develops the gluten, resulting in a crispier Kordoi.
- Cover the dough and let it rest for 10-15 minutes. This allows the gluten to relax, making the dough easier to roll.
- Divide the dough into small, equal-sized balls, about the size of a large gooseberry.
- On a lightly floured surface, roll each ball into a thin disc, approximately 3 inches in diameter.
- Using a sharp knife, make parallel cuts along the length of each disc, being careful not to cut all the way through.
- Starting from one end, tightly roll the cut disc into a spiral. Pinch the ends to seal.
- Gently press the two ends of the rolled Kordoi to plump the center.
- Heat the oil in a deep fryer or large pot over medium-high heat. Fry the Kordoi in batches until golden brown and crispy.
- Remove the Kordoi from the oil and place them on a plate lined with absorbent paper to drain excess oil.
- Serve the hot, crispy Kordoi immediately with your favorite ketchup or chutney.
