  • Peel and grate the potato. In a bowl, combine the grated potato with salt and pepper. Mix well to distribute the seasoning.

Create the Hash Brown Nests

  • Heat the butter (or oil) in a mini non-stick skillet over medium heat. Add a portion of the grated potato mixture to the center of the skillet, pressing gently to form a small, shallow circle or nest, leaving a slight well in the center. Cook for about 5 minutes, or until the edges are lightly golden and crispy.

Add the Egg and Cheese

  • Reduce heat to low. Sprinkle half of the shredded cheese over the cooked hash brown base. Gently crack the egg into the center of the nest. Top with the remaining cheese.

Finish Cooking and Garnish

  • Continue cooking for another 3-5 minutes, or until the egg is cooked to your liking and the cheese is melted and bubbly. Sprinkle with oregano and red pepper flakes (if using). Garnish with chopped spring onions.

Serve and Enjoy

  • Carefully remove the hash brown nest from the skillet and serve immediately. Enjoy with your favorite dipping sauce (sweet chili sauce is recommended!).
