- 1 cup Hash Browns shredded
- 1/2 cup Cheddar Cheese grated
- 1 tbsp Pepper black, freshly, ground
- 1/2 tsp Salt or to taste
- 1 tbsp Olive Oil
For the Egg Filling
- 2 tbsp Potatoes mashed
- 1/4 cup Onion chopped, or other preferred vegetables, such as bell peppers or spinach
- 3 Large Eggs
- 1 tbsp Milk for extra richness, optional
- 1/4 tsp Herbs dried, such as parsley or chives (optional)
Instructions
Preparation
- Preheat oven to 410°F (210°C).
- Grease a 12-cup muffin tin.
- Combine shredded hash browns, cheddar cheese, salt, and pepper in a bowl.
- Divide the hash brown mixture evenly among the muffin cups, pressing it into the bottom and up the sides to form nests with a hollow in the center.
- Bake for 15 minutes, or until the nests are golden brown and crispy.
Filling the Nests
- While the nests are baking, prepare the egg filling: Combine mashed potatoes, chopped onions, and optional herbs in a bowl. If using, whisk in milk or cream.
- Remove the hash brown nests from the oven.
- Reduce oven temperature to 350°F (180°C).
- Spoon the mashed potato mixture into the center of each nest.
- Crack one egg into the center of each potato nest on top of the mashed potato mixture.
Baking & Serving
- Bake for another 25-30 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Remove from the oven and let cool slightly before carefully removing from the muffin tin.
