Instructions

Prepare the Mushrooms

  • Rinse and trim the mushrooms. Set aside.

Make the Batter

  • In a bowl, whisk together the flour, cornflour, salt, pepper, and enough water to create a medium-thick batter.

Fry the Mushrooms

  • Heat the vegetable oil in a wok or large pan over medium-high heat. Dip each mushroom into the batter, ensuring it's fully coated. Carefully fry the mushrooms until golden brown and crispy. Remove and set aside on a paper towel-lined plate.

Prepare the Sauce

  • Heat remaining oil in the same wok. Add diced onion and stir-fry for 1 minute. Add minced ginger and garlic and sauté for another minute. Then add the green chilies and bell peppers, stir-frying for 2-3 minutes until slightly softened but still crisp.

Combine and Finish

  • Stir in tomato ketchup, green chili sauce, soy sauce, salt, and pepper. Add the fried mushrooms and toss to coat evenly. Cook for about a minute to heat through.

Garnish and Serve

  • Garnish with finely chopped fresh coriander. Serve hot as an appetizer or snack.

Recipe Notes

Expert Tips for the Best Chilli Mushrooms

  • For extra crispy mushrooms, ensure your oil is hot enough before frying, and don't overcrowd the pan.
  • Adjust the amount of green chilies to control the spiciness level according to your preference.
  • Feel free to add other vegetables, such as chopped carrots or snow peas, for extra flavor and color.
  • For a vegetarian option, ensure all your ingredients and cooking oil are vegetarian-friendly.
