Ingredients
For the Mushrooms
- 250 gm Mushroom button mushrooms or cremini mushrooms recommended. clean and trim stems.
- 1/2 cup All-Purpose Flour
- 3 tbsp Corn Flour
- 1/2 tsp Salt
- 1/4 tsp Pepper black
- Water Water as needed to make a medium-thick batter
- 2 cup Vegetable Oil for frying
For the Sauce
- 1 Onion diced, medium
- 2 Chili adjust to taste, green, slit lengthwise
- 1 Bell Peppers capsicum, diced, medium
- 7.5 clove Garlic minced
- 1 inch Ginger minced
- 4.5 tbsp Tomato Ketchup or tomato sauce
- 2.5 tbsp Chili Sauce green
- 1/2 tsp Soy Sauce
- 1.5 tsp Salt to taste
- Black Pepper Pepper black, to taste
- 1 tbsp Coriander finely chopped, for garnish
Instructions
Prepare the Mushrooms
- Rinse and trim the mushrooms. Set aside.
Make the Batter
- In a bowl, whisk together the flour, cornflour, salt, pepper, and enough water to create a medium-thick batter.
Fry the Mushrooms
- Heat the vegetable oil in a wok or large pan over medium-high heat. Dip each mushroom into the batter, ensuring it's fully coated. Carefully fry the mushrooms until golden brown and crispy. Remove and set aside on a paper towel-lined plate.
Prepare the Sauce
- Heat remaining oil in the same wok. Add diced onion and stir-fry for 1 minute. Add minced ginger and garlic and sauté for another minute. Then add the green chilies and bell peppers, stir-frying for 2-3 minutes until slightly softened but still crisp.
Combine and Finish
- Stir in tomato ketchup, green chili sauce, soy sauce, salt, and pepper. Add the fried mushrooms and toss to coat evenly. Cook for about a minute to heat through.
