Instructions
Prepare the Broccoli
- Wash and blanch broccoli florets in boiling water with a pinch of salt and turmeric for 2-3 minutes. Drain well and roughly chop or pulse in a food processor until finely minced, but not pureed.
Make the Spice Paste
- In a blender or food processor, combine garlic, green chilies, and ginger. Blend into a smooth paste.
Sauté Aromatics
- Heat oil in a pan or wok. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until translucent.
Cook the Spice Paste
- Add the prepared green chili paste to the pan and sauté until the raw smell disappears. Stir in turmeric powder, garam masala, and salt. Cook for a few seconds.
Combine Ingredients
- Add the minced broccoli and mix well with the spice mixture. Add the grated potato and sauté for a few seconds. Stir in lemon juice and mash the mixture gently using a spatula or potato masher until well combined.
Prepare the Batter
- In a separate bowl, whisk together rice flour, salt, and enough water to create a thick, smooth batter.
Shape and Coat the Cutlets
- Spread the toasted rolled oats on a plate. Divide the broccoli mixture into 8-9 equal portions. Shape each portion into a small ball, then flatten it into a cutlet shape between your palms.
Fry the Cutlets
- Dip each cutlet into the rice flour batter, then coat thoroughly with the toasted rolled oats. Heat oil in a non-stick pan or griddle over medium-low heat. Fry the cutlets for 1-2 minutes per side, or until golden brown and crispy, ensuring they are cooked through. Drizzle additional oil if necessary to maintain crispness.
Serve
- Serve the hot Broccoli and Potato Cutlets immediately with tomato ketchup or your favorite dipping sauce.
Recipe Notes
Expert Tips for Perfect Cutlets
- Toasting the rolled oats before using them enhances their flavor and adds extra crunch to the cutlets.
- Don't overcrowd the pan when frying the cutlets; this will ensure even cooking and prevent them from becoming soggy.
- Adjust the amount of green chilies according to your spice preference. For a milder flavor, use fewer chilies or omit them altogether.
- For extra flavor, you can add a pinch of red chili powder or a few chopped fresh coriander leaves to the cutlet mixture.
