Ingredients
For the Paneer Vadas
- 250 gm Cottage Cheese crumbled
- 2 Potato boiled and mashed
- 2 tbsp Corn Flour adds crispiness, arrowroot
- 1 Chili finely chopped, green
- 1 teaspoon Ginger grated
- 1.5 tsp Salt or to taste
- 2 tsp Chili Powder red
- 2 tsp Cumin Powder jeera, roasted
- 1/2 teaspoon Salt black, enhances flavor, optional
- Oil Vegetable Oil for deep frying
For Serving
- 2 cup Yogurt curd
- Chutney green, mint chutney preferred, to taste
- Tamarind Chutney imli chutney, sweet and sour, to taste
Instructions
Prepare the Paneer Vada Mixture
- Combine crumbled paneer, mashed potatoes, cornflour, chopped green chili, grated ginger, red chili powder, cumin powder, black salt (if using), and salt in a large bowl. Mix well until everything is thoroughly combined.
Shape and Fry the Vadas
- Take a small portion of the mixture (about 1-2 tablespoons), roll it into a ball, and then gently flatten it into an oval shape. Heat oil in a deep pan or kadai over medium heat. Once hot, carefully add the vadas to the oil, frying in batches to avoid overcrowding.
Fry Until Golden Brown
- Fry the vadas until they turn golden brown and crispy on both sides. This should take about 2-3 minutes per side. Remove the fried vadas and place them on a paper towel-lined plate to absorb excess oil.
