For the Chickpea Croquettes

For the Mango Salsa

  • 1/2 cup Mango diced, ripe
  • 1/2 cup Bell Peppers diced, mix of colors recommended
  • 1/2 tsp Chili Flakes
  • 1 pinch Oregano dried
  • 1-2 tsp Salt to taste
  • 1-2 tbsp Herbs chopped cilantro or parsley, for garnish, fresh

Instructions
 

Prepare the Chickpea Croquettes

  • Finely chop the onion and green chili.
  • In a mixing bowl, combine the chopped onion and chili, cooked chickpeas, pav bhaji masala (or your spice blend), chopped coriander, and salt. Mash the mixture together until it forms a dough-like consistency.
  • Add breadcrumbs to the mixture and mix thoroughly to bind the croquettes.
  • Divide the mixture into 10 equal portions and shape each into a small disc or patty.
  • Place the croquettes on a baking sheet lined with parchment paper.
  • Bake in a preheated oven at 200°C (400°F) for 20 minutes, or until golden brown and crispy.

Prepare the Mango Salsa

  • In a separate bowl, combine the diced mango, bell peppers, chili flakes, oregano, salt, and fresh herbs.
  • Mix well and chill in the refrigerator for at least 15 minutes to allow the flavors to meld.

Serve

  • Serve the warm, crispy chickpea croquettes with the chilled mango salsa. Garnish with extra fresh herbs if desired.
