Ingredients
For the Chickpea Croquettes
- 1 1/2 cup Chickpeas cooked, drained
- 1 Onion finely chopped
- 1 Chili finely chopped, green
- 3 tbsp Coriander chopped, fresh
- 2 tsp Pav Bhaji Masala or your favorite spice blend
- 1-2 tsp Salt to taste
- 1 tbsp Breadcrumb panko recommended for extra crispiness
For the Mango Salsa
- 1/2 cup Mango diced, ripe
- 1/2 cup Bell Peppers diced, mix of colors recommended
- 1/2 tsp Chili Flakes
- 1 pinch Oregano dried
- 1-2 tsp Salt to taste
- 1-2 tbsp Herbs chopped cilantro or parsley, for garnish, fresh
Instructions
Prepare the Chickpea Croquettes
- Finely chop the onion and green chili.
- In a mixing bowl, combine the chopped onion and chili, cooked chickpeas, pav bhaji masala (or your spice blend), chopped coriander, and salt. Mash the mixture together until it forms a dough-like consistency.
- Add breadcrumbs to the mixture and mix thoroughly to bind the croquettes.
- Divide the mixture into 10 equal portions and shape each into a small disc or patty.
- Place the croquettes on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 200°C (400°F) for 20 minutes, or until golden brown and crispy.
Prepare the Mango Salsa
- In a separate bowl, combine the diced mango, bell peppers, chili flakes, oregano, salt, and fresh herbs.
- Mix well and chill in the refrigerator for at least 15 minutes to allow the flavors to meld.
