Ingredients
For the Potatoes
- 3 Potatoes large, russet or yukon gold recommended
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
For Frying & Flavor
- 2 tbsp Vegetable Oil or other high-heat oil like canola or peanut
- 1 tsp Cumin Seeds
- 1 tsp Garam Masala
- 1.5 tbsp Coriander dhania, chopped
Instructions
Prepare the Potatoes
- Peel and slice the potatoes into 1/4-inch thick rounds.
- In a bowl, combine the sliced potatoes, ginger-garlic paste, turmeric powder, and salt. Mix thoroughly to coat the potatoes evenly. Let the mixture sit for 10-15 minutes to allow the flavors to meld.
Fry the Potatoes
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the cumin seeds and let them sizzle and turn brown (about 30 seconds).
- Add the marinated potatoes to the skillet in a single layer, ensuring not to overcrowd the pan. Cook for 5 minutes on high heat, stirring occasionally, to achieve a nice sear.
- Reduce the heat to medium and continue to cook the potatoes for another 10-12 minutes, stirring occasionally, until they are tender and golden brown. If needed, cook in batches to ensure even crisping.
Finish and Serve
- Increase the heat to high again, and add the garam masala. Stir well to combine the spices with the potatoes and cook for another 3-4 minutes.
- Stir in the chopped coriander leaves, and remove from heat. Serve hot as a side dish or part of a larger meal.
