- 1/4 cup Raisins
- 1/4 cup Dates chopped, pitted
- 1/4 cup Charoli Nuts soaked in hot water and deskinned

- 100 gm Vermicelli roasted sewaiyaan
- 1 cup Clarified Butter or unsalted butter
Instructions
- In a large pot or pan, melt the ghee over medium heat. Add the mixed nuts and roast, stirring frequently, until lightly golden and fragrant. This enhances their nutty flavor and adds a pleasant crunch to the Sheer Khurma.
- Add the vermicelli to the pot and roast, stirring constantly, until it turns a light golden brown. Roasting the vermicelli adds a subtle toasty flavor and prevents it from becoming mushy in the pudding.
- In a separate heavy-bottomed pot, bring the milk to a boil. Reduce the heat to low and simmer, stirring occasionally, until the milk reduces to about 3/4 of its original volume. This concentrates the milk's richness and creates a creamier base for the Sheer Khurma.
- Add the roasted nuts, roasted vermicelli, sweetened condensed milk, heavy cream, raisins, dates, and charoli nuts to the reduced milk. Stir well to combine all the ingredients.
- Cover the pot and simmer over low heat for 10 minutes, stirring occasionally, until the vermicelli is cooked through and the flavors have melded together. The low heat ensures gentle cooking and prevents the pudding from scorching.
