Ingredients
For the Kalakand
- 1 cup Milk
- ¾ cup Cottage Cheese fresh, homemade recommended
- 1 cup Mango Purée alphonso mango preferred, thick store-bought is acceptable
- ½ can Milk adjust to desired sweetness, condensed
- ½ tsp Alum Powder (fitkari)
- 1 tsp Cardamom Powder (elaichi)
- 11 Almonds blanched, sliced
- 11 Pistachios blanched, sliced
- ⅛ tsp Saffron Strands soaked in warm milk
For Garnish
- Silver Vark as needed
- Almonds as needed, sliced
- Pistachios as needed, sliced
Instructions
- In a small bowl, soak saffron strands in warm milk. Set aside to infuse the color and flavor. This step enhances the aroma and visual appeal of the Kalakand.
- In a heavy-bottomed pan or kadai, bring the milk to a rolling boil over medium heat. Once boiling, add the alum powder. The alum acts as a coagulant, helping the milk solids separate and thicken.
- As the milk begins to curdle, gently crumble in the fresh paneer. Stir continuously to prevent sticking and ensure even cooking.
- Add the mango purée, condensed milk, and saffron-infused milk to the pan. Stir well to combine all the ingredients.
- Reduce the heat to low-medium and continue stirring the mixture. This constant stirring is crucial for achieving a smooth, creamy texture and preventing the Kalakand from burning.
- Add the cardamom powder and the sliced almonds and pistachios. Stir to incorporate.
