Ingredients
Pumpkin
- 1 cup Pumpkin chopped
For the Coconut Paste
- ¾ cup Coconut fresh, grated
- 1 tsp Ginger grated
- ½ tsp Cumin Seeds
- 3 Chiles green, stemmed
For the Tempering
- 2 tsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 2 Chiles dried, red
- 1 sprig Curry Leaves
- ⅛ tsp Asafoetida
Other Ingredients
- 2 cup Yogurt
- ¼ tsp Turmeric Powder
- 1 Tbsp Coriander chopped, fresh
- 1-2 tsp Salt to taste
Instructions
- Peel and chop the pumpkin into 2cm pieces. Heat 1 tsp of oil in a pan over medium-high heat. Add the pumpkin, and a pinch of salt. Sauté for a minute to lightly sear the pumpkin.
- Reduce the heat to low, cover, and cook until the pumpkin is tender, about 5-7 minutes. This gentle steaming ensures even cooking.
- While the pumpkin cooks, prepare the coconut paste. In a blender or food processor, combine the grated coconut, green chiles, ginger, and cumin seeds.
- Pulse the ingredients until finely ground. Add a little water, a tablespoon at a time, to create a smooth paste. Don't add too much water at once to prevent a watery paste.
- Once the pumpkin is cooked, add the coconut paste to the pan. Stir well to combine.
- Cook over medium heat until the mixture bubbles gently, allowing the flavors to meld.
- In a separate bowl, whisk the yogurt until smooth. This prevents curdling when added to the hot curry.
- Stir the turmeric powder into the pumpkin mixture and adjust the salt to taste.
- Reduce the heat to low and gently pour in the whisked yogurt. Stir continuously to prevent curdling.
- Simmer for 2-3 minutes, or until heated through. Do not boil, as this can cause the yogurt to separate.
- Prepare the tempering. Heat the remaining 2 tsp of oil in a small pan over medium heat. Add the mustard seeds and let them splutter. Add the cumin seeds, curry leaves, dried red chiles, and asafoetida. Fry until fragrant.
- Pour the tempering over the curry and garnish with fresh coriander.
