For the White Sauce

For the Chilli Paneer

  • 200 grams Cottage Cheese indian cottage cheese, cubed
  • 4 Chilies slit lengthwise, green
  • 1.5 tsp Salt or to taste
  • 1/4 tsp Pepper freshly ground, black, preferred
  • 1/4 tsp Oregano dried oregano flakes
  • 1 tsp Herbs dried italian herbs, mixed, optional

For Garnish

  • 2 Chilies finely chopped, for garnish, green

Instructions
 

Make the White Sauce

  • Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, until lightly browned. Gradually whisk in milk until smooth. Reduce heat to low and simmer, stirring frequently, until the sauce thickens slightly (about 5-7 minutes). Stir in mozzarella cheese until melted and smooth.

Combine and Simmer

  • Add the slit green chilies, salt, black pepper, oregano, and mixed herbs to the white sauce. Stir well to combine.

Add Paneer and Finish

  • Add the paneer cubes to the sauce. Gently stir to coat the paneer evenly. Turn off the heat. Cover the pan and let it sit for 5 minutes to allow the paneer to heat through and absorb the flavors.

Serve

  • Garnish with finely chopped green chilies and serve hot with roti, naan, or rice.
