Ingredients
For the White Sauce
- 1 tbsp Butter
- 2 tbsp All-Purpose Flour
- 1 cup Milk whole milk recommended for creaminess
- 1/2 cup Mozzarella Cheese shredded
For the Chilli Paneer
For Garnish
- 2 Chilies finely chopped, for garnish, green
Instructions
Make the White Sauce
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, until lightly browned. Gradually whisk in milk until smooth. Reduce heat to low and simmer, stirring frequently, until the sauce thickens slightly (about 5-7 minutes). Stir in mozzarella cheese until melted and smooth.
Combine and Simmer
- Add the slit green chilies, salt, black pepper, oregano, and mixed herbs to the white sauce. Stir well to combine.
Add Paneer and Finish
- Add the paneer cubes to the sauce. Gently stir to coat the paneer evenly. Turn off the heat. Cover the pan and let it sit for 5 minutes to allow the paneer to heat through and absorb the flavors.
Serve
- Garnish with finely chopped green chilies and serve hot with roti, naan, or rice.
Recipe Notes
Expert Tips for the Best Paneer Chilli
- For extra creaminess, use full-fat milk and cream cheese instead of mozzarella.
- Adjust the amount of green chilies based on your spice preference. Start with fewer and add more if needed.
- Don't overcook the paneer; it should be tender but not mushy.
- For a richer flavor, add a pinch of garam masala or turmeric to the white sauce.
