  • Heat 400ml of coconut milk in a heavy-bottomed saucepan over medium heat until it just begins to simmer.
  • Remove 100ml of simmering coconut milk from the saucepan and set aside.
  • In a separate bowl, whisk together the 100ml of reserved warm milk, custard powder, and sugar until smooth and completely lump-free.
  • Slowly pour the custard mixture into the simmering coconut milk, whisking constantly to prevent lumps from forming.
  • Continue whisking until the custard thickens to a creamy consistency. Remove from heat and let it cool completely.

Prepare the Mango Puree

  • While the custard cools, blend the chopped mangoes in a food processor or blender until completely smooth.

Combine & Chill

  • Once the custard has cooled, gently fold in the mango puree using a spatula or whisk. Stir in the chilled heavy cream.
  • Pour the mixture into individual serving bowls or a larger dish. Refrigerate for at least 1 hour, or until set.

Garnish & Serve

  • Garnish each serving with pomegranate seeds and chopped mango before serving. Enjoy!
