Ingredients

- 400 ml Coconut Milk
- 100 ml Milk
- 1/4 cup Custard Powder vanilla flavored
- 1/4 cup Sugar granulated
For the Mango Topping & Garnish:
- 2 Mangoes and chopped (about 1 1/2 cups), peeled, ripe
- 1/4 cup Heavy Cream chilled, fresh
- 1/4 cup Pomegranate Seeds
Instructions
Prepare the Custard Base
- Heat 400ml of coconut milk in a heavy-bottomed saucepan over medium heat until it just begins to simmer.
- Remove 100ml of simmering coconut milk from the saucepan and set aside.
- In a separate bowl, whisk together the 100ml of reserved warm milk, custard powder, and sugar until smooth and completely lump-free.
- Slowly pour the custard mixture into the simmering coconut milk, whisking constantly to prevent lumps from forming.
- Continue whisking until the custard thickens to a creamy consistency. Remove from heat and let it cool completely.
Prepare the Mango Puree
- While the custard cools, blend the chopped mangoes in a food processor or blender until completely smooth.
Combine & Chill
- Once the custard has cooled, gently fold in the mango puree using a spatula or whisk. Stir in the chilled heavy cream.
- Pour the mixture into individual serving bowls or a larger dish. Refrigerate for at least 1 hour, or until set.
