Ingredients
For the Paneer
- 250 gm Cottage Cheese cut into 1-inch cubes. amul malai paneer is recommended., paneer
For the Spice Oil
- 1 tbsp Mustard Oil or refined vegetable oil
- 1 Bay Leaf
- 1 inch Cinnamon Stick
- 4 Cloves
- 2-3 strands Saffron Strands
For the Curry
- 1 tsp Cumin Seeds
- 3 tsp Fennel Seeds
- 2 tsp Turmeric Powder
- 1 tsp Cardamom Powder
- 1 tsp Salt or to taste
- 1 cup Milk
- 6 cup Water
For Garnishing
- Coriander chopped
Instructions
Preparing the Spice Oil
- Heat mustard oil in a wok or large pan. Add the bay leaf, cinnamon stick, and cloves. Sauté for a minute until fragrant.
Building the Curry Base
- Add cumin seeds and fennel seeds to the oil. Sauté for another minute until fragrant. Stir in the turmeric powder and salt. Add the 6 cups of water and bring to a boil.
Cooking the Paneer
- Once boiling, gently add the paneer cubes. Reduce heat to a simmer and cook until the paneer is tender and the sauce has slightly thickened (about 10-15 minutes).
Adding Milk and Saffron
- Pour in the cup of whole milk and stir in the saffron strands. Continue to simmer until the curry reaches your desired consistency. This will take about 5-7 minutes.
Finishing Touches
- Stir in the cardamom powder. Remove from heat.
Serving
- Garnish with fresh chopped coriander. Serve hot with rice or naan bread.
