  • 250 gm Cottage Cheese cut into 1-inch cubes. amul malai paneer is recommended., paneer

Preparing the Spice Oil

  • Heat mustard oil in a wok or large pan. Add the bay leaf, cinnamon stick, and cloves. Sauté for a minute until fragrant.

Building the Curry Base

  • Add cumin seeds and fennel seeds to the oil. Sauté for another minute until fragrant. Stir in the turmeric powder and salt. Add the 6 cups of water and bring to a boil.

Cooking the Paneer

  • Once boiling, gently add the paneer cubes. Reduce heat to a simmer and cook until the paneer is tender and the sauce has slightly thickened (about 10-15 minutes).

Adding Milk and Saffron

  • Pour in the cup of whole milk and stir in the saffron strands. Continue to simmer until the curry reaches your desired consistency. This will take about 5-7 minutes.

Finishing Touches

  • Stir in the cardamom powder. Remove from heat.

Serving

  • Garnish with fresh chopped coriander. Serve hot with rice or naan bread.
