Instructions

Prepare the Hard-Boiled Eggs

  • Hard-boil the eggs according to package directions. Once cool, peel and carefully cut each egg in half lengthwise.

Remove the Yolks

  • Gently remove the yolks from each egg half and place them in a medium bowl.

Make the Avocado Filling

  • Mash the avocado with a fork until smooth. Add the mayonnaise, minced white onion, red chili flakes, salt, pepper, and lemon juice to the bowl with the mashed avocado.

Combine and Mix

  • Add the egg yolks to the avocado mixture and gently mix with a fork until everything is well combined. Avoid overmixing to maintain a slightly chunky texture.

Fill the Egg Whites

  • Spoon or pipe the avocado filling back into the egg white halves.

Serve and Enjoy

  • Serve immediately or chill for later. Garnish with extra red chili flakes or a sprinkle of paprika, if desired.

Recipe Notes

Expert Tips for Perfect Avocado Deviled Eggs:

  • For extra creamy filling, add a tablespoon of sour cream or Greek yogurt.
  • If your avocado is not very ripe, you can add a teaspoon of olive oil to the filling for extra creaminess.
  • To make ahead, prepare the filling and store it separately from the egg whites in an airtight container in the refrigerator for up to 2 days. Assemble just before serving.
  • Get creative with your presentation! Garnish with fresh herbs like chives or dill, a sprinkle of everything bagel seasoning, or a drizzle of hot sauce.
