Ingredients
For the Ada
- 1/3 cup Readymade Ada
- 3 cup Water
For the Avocado Mixture
- 2 Avocados ripe
- 2 cup Milk optional
- 1/4 tsp Saffron Strands
For the Pradhaman
- 1/2 cup Sugar brown
- 1/4 tsp Cardamom ground
- 1/4 tsp Kesar Milk Masala optional
Instructions
- Rinse the readymade ada under cold water and drain well. This removes any excess starch.
- In a saucepan, bring 3 cups of water to a boil. Add the rinsed ada. Ensure the ada is fully submerged. Cover the saucepan and let it simmer for 15 minutes, or until the ada is tender.
- While the ada is cooking, prepare the avocados. Cut each avocado in half lengthwise and twist to separate the halves.
- Scoop the avocado flesh into a blender. Discard the pits and skins.
- Add the milk (or water if omitting milk) and saffron strands to the blender. Blend until smooth and creamy.
- Pour the blended avocado mixture into a cooking pan. Add the cooked ada, along with any remaining water from cooking, to the pan.
- Place the pan over medium heat. Stir frequently to prevent sticking and burning.
- Once the mixture starts to simmer, add the brown sugar. Continue stirring until the sugar dissolves completely.
- As the mixture comes to a gentle boil, add the ground cardamom and kesar milk masala (if using). This infuses the pradhaman with warm, aromatic spices.
- Reduce the heat to low and let the pradhaman simmer for 5-8 minutes, allowing the flavors to meld. The ada should be cooked through and the mixture should have thickened slightly.
- While the pradhaman simmers, prepare the garnish. Heat the ghee in a small frying pan over medium heat. Add the cashews and almonds. Sauté until they turn golden brown and fragrant. This adds a delightful crunch to the creamy pradhaman.
