Activate the Yeast

  • In a small bowl, combine yeast, sugar, and lukewarm water. Let stand until foamy (about 5-10 minutes).

Prepare the Dough

  • In a large bowl, combine whole wheat flour and salt. Add the activated yeast mixture and olive oil. Gradually add water, kneading until a soft, elastic dough forms. Divide the dough into four equal portions.

Color the Dough

  • Incorporate beetroot puree into one dough portion, spinach puree into another, and turmeric powder into a third. Keep the fourth portion plain. Knead each colored dough until the color is evenly distributed.

First Proof

  • Place each dough portion in a separate oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Prepare the Potato Stuffing

  • Heat oil in a pan. Add garlic paste, cumin powder, chili powder, and turmeric powder. Sauté for a minute. Add the boiled and mashed potatoes, salt and mix well. Cook for another 2-3 minutes. Stir in chopped cilantro.

Shape the Vada Pav

  • Punch down the risen doughs. Roll out each colored dough into small circles. Spread garlic butter on each circle. Add a spoonful of the potato stuffing to the center of each circle. Fold the dough over to seal, forming a ball.

Second Proof

  • Arrange the shaped vada pavs in a greased baking pan. Let rest for 20 minutes.

Bake the Vada Pav

  • Preheat oven to 350°F (180°C). Brush the vada pavs with milk and melted butter. Sprinkle with grated cheese (optional). Bake for 20-25 minutes, or until golden brown.

Finish and Serve

  • Remove from oven and immediately brush with butter again for a soft crust and glaze. Transfer to a wire rack to cool for 30 minutes before serving.
