Ingredients
Spices & Aromatics
- 1 large Bay Leaf tej patta
- 1 tbsp Ginger Garlic Paste
- 1 tsp Garam Masala
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder adjust to your spice preference, red
- 1.5 tsp Salt or to taste
Protein & Other
- 4 Eggs hard-boiled and gently sliced
- 3 tbsp Vegetable Oil
- 1 cup Water as needed, or more
Instructions
Prepare the Aromatics
- Heat vegetable oil in a pan over medium heat. Add the bay leaf and ginger-garlic paste. Sauté for 1 minute until fragrant.
Sauté Vegetables
- Add the chopped onions and sauté for 2-3 minutes until softened. Add the chopped tomatoes and cook until they soften and become slightly mushy, about 5-7 minutes.
Build the Flavor
- Stir in the turmeric powder, garam masala, red chili powder, and salt. Sauté for 2-3 minutes, stirring constantly, until the spices are fragrant and well combined.
Create the Curry Base
- Add 1/2 cup of water to the pan. Bring to a simmer and cook until the oil starts to separate from the sauce. Repeat this process 2-3 times, adding more water as needed, until you achieve a smooth, thick sauce.
Add the Eggs
- Gently add the hard-boiled, sliced eggs to the curry. Add a splash of water to prevent sticking and simmer for 2 minutes to heat through. Remove from heat.
Serve and Enjoy
- Serve your delicious Egg Curry hot with steamed rice, naan bread, or roti.
Recipe Notes
Expert Tips for the Best Egg Curry:
- For extra flavor, use a combination of vegetable oil and ghee (clarified butter).
- Don't overcrowd the pan when sautéing the vegetables. Work in batches if necessary to ensure even cooking.
- Adjust the amount of red chili powder to control the spiciness of the curry to your liking.
- For a richer curry, simmer the sauce for a longer period to allow the flavors to meld together.
