- 2 Bell Peppers 1 green, 1 red, bell peppers, finely chopped
- 4 Potato boiled and mashed, medium-sized
- 5 Tomato finely chopped
- 2 Onion finely chopped, medium-sized

- 2 tbsp Ginger-Garlic-Green Chili Paste
- 2 tsp Chili powder adjust to taste, red
- 1 tsp Cumin
- 3 tsp Pav Bhaji Masala and coriander powder, or substitute with a blend of garam masala, turmeric
- 1 tsp Paprika smoked paprika adds a deeper flavor
- 1 tsp Coriander
Instructions
Sauté Aromatics
- Heat butter in a pan. Add cumin seeds and sauté until fragrant. Add ginger-garlic-green chili paste and cook for 2 minutes. Add finely chopped onions and cook until browned, about 10 minutes.
Add Tomatoes and Capsicum
- Add chopped tomatoes and cook until softened. Then add the chopped capsicum and cook until the mixture comes together, about 5-7 minutes.

- Add red chili powder, pav bhaji masala, paprika, coriander powder, and salt. Stir well to combine. Add the boiled and mashed potatoes and mix thoroughly.
