Ingredients

- 1/2 ltr Water
- 250 gm Corn Flour
Dry Ingredients
- 250 gm Ghee
- 250 gm Sugar
- 1 cup Fruits chopped, dried, mixed
- 1/2 tsp Food Coloring
Instructions
- In a deep pan, bring the water to a boil. This will create the base for the Shwegyi.
- In a separate bowl, whisk the corn flour with a little bit of cold water to form a smooth paste. This prevents lumps when added to the boiling water.
- Slowly pour the corn flour paste into the boiling water, stirring continuously. Constant stirring is crucial to prevent the mixture from sticking to the bottom of the pan and forming lumps.
- Add the ghee and sugar. Continue stirring until the mixture thickens. The ghee adds richness and a beautiful sheen to the Shwegyi.
- Stir in the food coloring and chopped mixed dried fruits. The dried fruits add bursts of color, flavor, and texture.
- Once the mixture has thickened considerably, remove it from the heat. Lightly grease a flat tray or dish with ghee. This prevents sticking and ensures clean removal later.
- Pour the Shwegyi mixture onto the greased tray and spread it evenly. Allow it to set at room temperature for at least 1 hour, or until firm.
- Once set, cut the Shwegyi into diamond or square shapes. Serve and enjoy!
