Barley grain has amazing cooling effects on our bodily health. Muskmelon being a high water content fruit and being rich in potassium helps to fight fatigue. Both these ingredients play a vital role in keeping our body well hydrated. Further I have included palm sugar as the sweetener which is highly rich in vitamins and minerals. So, Why not make healthy cooler and beat the heat during summer?

Ingredients
For the drink
- 1¼ cup Barley water
- 1 cup Muskmelon puree
- 2 teaspoon Muskmelon seeds
- ½ cup Water
- 2 tbsp Palm sugar
- 1 pinch Cardamom powder
- 1 pinch Dry ginger powder

Instructions
- Take a pressure pan and dry roast the barley grains until they turn slightly brown.
- Wash the roasted grains and add 3 cups of water and salt.
- Pressure cook the barley grains for 6 - 7 whistles.
- Filter the barley water and measure 1 ¼ cups of barley water.
- Allow the barley water to cool completely.
- Meanwhile clean and cut musk melon into small cubes.
- Remove seeds from the fruit and measure 2 teaspoons of fresh muskmelon seeds.
- In a nutriblend jar or juicer mixer jar, add around 2 cups of muskmelon cubes, seeds and palm sugar.
- Blend to a thick puree without adding water. You should get one cup of this puree and hence use the muskmelon cubes accordingly.
- Take a mixing bowl add muskmelon puree, barley water, ½ cup of water, cardamom powder and dry ginger powder.
- Mix well and transfer it to a serving glass.
- Serve the cooler garnished with cooked barley grains / muskmelon pieces if desired.
Recipe Notes
Enjoy the complete nutritional effect of this drink by avoiding ice cubes / crushed ice as the ingredients used in this drink are a natural cooler themselves.
I used 200 ml measuring cup.
Adjust sweet according to your taste and the sweetness of the fruit.
