Ingredients
Spices and Flavorings
- 1 tsp Salt
- ½ tsp Turmeric Powder
- 1 tsp Pepper black
- 4 Chillies dried, red
- 1 pinch Asafoetida
Other Ingredients
- 1 cup Coconut grated
- 1 tsp Cumin Seeds
- 1 tsp Pigeon Pea
- 1 cup Pigeon Pea boiled
- 8-10 Avarampoo Flowers tanner's cassia, fresh
- ½ tsp Mustard Seeds
Instructions
- Gently remove the stems from the avarampoo flowers. Wash the flowers thoroughly and set aside.
- In a pot, combine the green peas, green beans, and carrot. Add enough water to cover the vegetables. Season with salt. Bring the water to a boil and cook the vegetables until tender.
- In a blender, combine 1 tablespoon of grated coconut, 2 dried red chilies, ½ teaspoon of toor dal, and the black pepper. Add a little water and grind to a smooth paste.
- Add the boiled vegetables to the pot with the boiled toor dal. Stir in the avarampoo flowers.
- Pour the ground coconut spice paste into the pot with the vegetables and dal. Mix well. This infuses the dish with a rich, aromatic flavor.
- Cover the pot and let it simmer for 5 minutes. This allows the flavors to meld together beautifully.
- Heat a small pan with a little oil. Add the mustard seeds and asafoetida. Once the mustard seeds splutter, pour this tempering over the kootan. This adds a final layer of flavor and aroma.
- Serve the Avarampoo Kootan hot with roti, naan, phulkas, or rice.
